I love cheese ravioli. I used to buy the frozen Rosetto ravioli or the refrigerated Buitoni ravioli. Sometimes I would add a marinara sauce, but I actually liked them best without any sauce. Weird? Maybe. But that was ma thing.
I saw posting about "healthier" Wonton Wrapper Cheese Ravioli, and I had to try it. Now this is my favorite, 10 minute, go-to meal. It literally takes 10 minutes. AND the best part is that each ravioli is only 57 calories versus the store bought ravioli equivalent amount at 84 calories.
Here's what you need:
1 Package of Wonton Wrappers 1 Package of Low-Fat Ricotta 1 Jar of Sauce (optional) 1 bowl of water for "dipping"
Directions: 1. Boil a medium/large size pot of water on the stove. Add a pinch of salt so the wonton wrappers do not stick to anything. 2. Place 1 tbsp. of ricotta in the center of 1 wonton wrapper. 3. Dip your hand (or use a brush) and brush water along the outside perimeter of the wonton wrapper.
4. Place the second wonton wrapper on top and press edges together, getting out any big air bubbles. Make as many as you'd like.
5. Place ravioli in boiling water for 2-3 minutes (about 6 fit at a time), then remove from heat and scoop ravioli out with a strainer spoon. 6. Top with sauce or parmesan or pesto or basil OR enjoy plain!
